French Hot Chocolate

Yield: approximately 2 servings

Ingredients:

  • 1½ cups whole milk
  • ½ cup heavy cream
  • 2 teaspoons powdered sugar
  • ½ teaspoon espresso powder (optional, enhances chocolate flavor)
  • 8 ounces bittersweet chocolate (at least 70% cocoa), chopped
  • Whipped cream, for serving

Instructions:

  1. Heat Dairy Mixture: In a medium saucepan over medium heat, combine the whole milk, heavy cream, powdered sugar, and espresso powder (if using). Whisk the mixture until small bubbles form around the edges, indicating it's hot but not boiling.
  2. Incorporate Chocolate: Remove the saucepan from heat and add the chopped bittersweet chocolate. Stir until the chocolate is completely melted and the mixture is smooth. If necessary, return the saucepan to low heat to ensure all the chocolate melts thoroughly.
  3. Serve: Pour the hot chocolate into mugs and top generously with whipped cream. Serve immediately and enjoy the rich, velvety texture.
